It is important to include as much detail as possible. For example, if you are interested in providing equipment hire, include the size of your operation, booking process, storage arrangements etc. If you are interested in operating as a mobile food vendor, describe your proposed offering and include a sample menu. Detail any equipment you may require (e.g. chairs, tables) that are not permanently fixed to your vehicle.
